Operations

Proper operating procedures in Food & Beverage and Purchasing help develop productive communication between the departments leading to improved coordination and higher efficiency resulting in increased profitability.

Menu Engineering

Outlet profitability is achieved through proper pricing, product specification, portion control, and sales focused menu design.

Beverage

Typically overlooked by procurement programs beverage offers another opportunity for cost savings and increased revenue resulting in bottom line profits.

Logistics

Remote locations present unique logistical and product availability challenges. We work with vendors to source and deliver the premium product mix required by luxury brands no matter the location.

FF&E

FF&E defines a property’s ambiance creating the feeling and mood experienced by the guest. We assist in finding items that accomplish this desired goal while remaining within budget.

Communication & Support

We work hand in hand with property team members to guide them every step of the way and are available to assist them at any time. We do not just implement our program and disappear.

Daniel Kube – Principal

Daniel Kube has over two decades experience in restaurant management, concept development, and luxury hospitality consulting with a focus on F&B operations and purchasing. His introduction to the world of food & beverage began with a local Japanese restaurant where he quickly climbed the ranks to restaurant manager. He later oversaw multiple locations and was part of the development team that instituted a concept change from Authentic Japanese cuisine to American Asian fusion. The success of the new concept resulted in the restaurant group going public several years later.

Following 13-years of consulting for luxury hotels and ownership groups he spent the next few years as chief operating officer for his family’s nutraceutical business. After negotiating the sale of the company, he returned to his roots in hospitality realizing how much he missed it while away.

Upon returning Daniel found that service to the luxury sector had diminished in quality with large companies now dominating procurement programs. Focus was no longer on client success but on corporate purchase volume requirements and category growth mandates. Knowing that luxury properties require a premium level of service he decided to start Kubē Consulting. With the relationships and strategic partnerships developed throughout his career Kubē Consulting is armed with the tools to confidently deliver savings and profitability to his clients while providing the expertise and attention to detail they expect.

Mr. Kube has worked with leading global luxury brands such as Four Seasons, Ritz Carlton, Raffles Hotels, Dorchester Collection, Mandarin Oriental, Rosewood Hotels, Peninsula Hotels, Taj Hotels and Montage Resorts as well as ownership groups including Strategic Hotel Capital and Blackstone Group.

Daniel’s projects averaged double digit cost reductions with additional savings coming from on property observations and ongoing recommendations. His clients consistently met aggressive budgetary goals and repeatedly saw year over year food cost reductions.

His projects covered all property types ranging from boutique resorts, city business hotels, ski lodges, remote destination resorts to urban lifestyle hotels and wellness resorts spanning over twenty countries.
